Winemaking

The selected grapes are placed in wooden tanks (5 tons) for stirring and homogenization. No yeast or additives are used. The fermentation lasts for 10 days, during which “piégeage” (punching down) is applied to extract the phenolic compounds. The two varieties are fermented separately. The temperature is maintained at a constant 24°C. After fermentation, the must is separated, and malolactic fermentation occurs in oak barrels or wooden tanks.

Aging: 18-24 months in 300-liter barrels made of French oak from selected top manufacturers (first and second use). During the aging period, the wine will be homogenized twice.

Bottle aging: 12-24 months in the bottle.
