Description

Benefiting from the unique microclimate of Mount Athos, the grapes are hand-picked and laid out under the sun for one week before fermentation. This sun-drying process results in a wine with a deep caramel hue, coral-red highlights, and a complex bouquet of dried fruits—fig, apricot, raisin—and sweet spices. Its acidity provides vibrancy and balance. A rich aftertaste follows. This wine continues a long monastic tradition of naturally sweet wines made from sun-dried grapes.

Vinification

The grapes for the first vintage of the new label (2016) were hand-harvested in September (early in the month for the Grenache Rouge and in the last week for the Xinomavro). The age of the vines ranges from 20 to 30 years, with a yield of 500 kg of fresh grapes per stremma. The grapes are sun-dried for 6 to 8 days. This is followed by a slow alcoholic fermentation lasting 40 days. Bottling and aging in the bottle before being released to the market.
