vinification

The

selected grapes are placed in wooden tanks (5 tons) for stirring and homogenization. There is no use of yeast or auxiliaries. Fermentation lasts 10 days, during which “piégeage” is applied in order to extract the phenolic components. The two varieties are vinified separately. The temperature is stable at 24°C. Separation of must, malolactic fermentation in oak barrels or wooden tanks.


Maturation: 18-24 months in 300 liter barrels of French oak from selected leading manufacturers (1st and 2nd use). During the ripening period, the wine will be homogenized twice.


Ageing: 12-24 months in bottle
