Extra Virgin Olive Oil of Mount Athos, from the Holy Monastery of Iviron

On Mount Athos, in the Kalyvi of Agios Nikolaos of the Skete of Timios Prodromos of the Holy Monastery of Iviron, this extra virgin olive oil is produced by the method of cold pressing. The production of this virgin olive oil is made in the olive press of Skiti by the monks, who create an excellent product always with respect to nature. An extra virgin olive oil of Mount Athos with the unique taste of Greek olive oil and with acidity at 0.05%. The extra virgin olive oil of the Holy Monastery of Iviron, like all Mount Athos olive oils, is available in limited quantities. This particular oil stands out with the special aroma of freshly cut olives, which characterizes it and its rich taste.

Olive Oil Ingredients

Olive oil is rich in vitamin E, monounsaturated fatty acids (up to 83%) and antioxidants, known as polyphenols. Olive oil is a rich source of monounsaturated fatty acids, which reduce the risk of heart disease. In fact, even the World Health Organization recommends consuming two tablespoons of olive oil a day to protect the heart.

Protective properties

The protective effect of monounsaturated fatty acids on cholesterol levels is now widely known. In fact, a large percentage of the protective properties of olive oil are attributed to its high content of monounsaturated fatty acids. At the same time, the phenolic components of olive oil contribute to the prevention and protection from risk factors for cardiovascular diseases, while it has been documented that they have anti-inflammatory and chemoprotective properties. In particular, special mention is made of olive oil oleocanthal, which seems to have strong anti-inflammatory action.

In addition, a positive relationship between monounsaturated fatty acid intake and bone mineral density has been established. This is underlined in a study that states that the occurrence of fractures is lower in Greece, where olive oil is the main source of monounsaturated fatty acids, than in the United States and Northern European countries.

Basis of the Mediterranean Diet

Today, olive oil is the basis of the Mediterranean food pyramid, which has proven to be a model of proper and healthy nutrition and a factor of longevity. The European EUROLIVE study presented, in 2006, documented evidence for the protective role of phenolic components of olive oil. The experiments of this study were carried out on 200 healthy volunteers from all over Europe and demonstrated protection against oxidative stress. In particular, there was an increase in HDL (good cholesterol) levels, and reduced markers of lipid oxidative stress. In addition, the same study showed a 13% reduction in markers of DNA oxidation, comparable to the amounts seen after smoking cessation.
