The Athonite Susuura honey has a characteristic delicate aroma with a unique taste and a slightly bitter aftertaste, crystallizing quickly within 1-2 months. However, it can easily return to its natural state if warmed in a water bath at low temperatures (not exceeding 70°C), as higher temperatures may destroy its nutrients. Its strong, rich, and smoky flavor has been compared to that of butter caramel, and it becomes even more intense the longer it is stored.

Plant Ericaceae – Susuura:

The Ericaceae is a woody shrub with abundant flowering in the autumn. Its flowers are numerous small, conical, pink ones, grouped in small clusters. It is an excellent bee forage plant, and the erica honey or susuura honey is considered among the best honeys. The spring and autumn Ericaceae are among the most important beekeeping plants in Greece and are produced almost throughout the country. The medicinal properties of the herb have been recorded since the Middle Ages, as referenced in books from the 7th century AD.

Susuura Honey – Properties:

Athonite Susuura honey is harvested from September to November (a period of abundant flowering for the plant) in the Garden of the Virgin Mary; however, there are also years when it is not produced at all.
