The Authentic Sousouras Honey of Mount Athos:

Mount Athos sousouras honey is an excellent monastic product produced by monks of Mount Athos who settle in small cells and cloisters.

Mount Athos sousouras honey has a characteristic delicate aroma with a special taste and bitter aftertaste, while crystallizing quickly in 1-2 months. However, it easily returns to its natural state if it is heated in a bain-marie at a low temperature (not above 70ο C) because it loses its nutrients. Its strong, rich and smoky taste has been compared to that of butter caramel and becomes even stronger the longer we preserve it.

Heather Plant – Sousoura:

Heath is a brushwood shrub with lush flowering in autumn. Its flowers are many small, cone-shaped, pink, in small inflorescences. It is an excellent beekeeping plant and heather honey or sousouras honey is considered one of the best honeys. Spring and autumn heather is one of the most important beekeeping plants in Greece and is produced almost all over the country. The healing properties of the herb have been recorded since the Middle Ages, since they are mentioned in books of the 7th century AD.

Sousouras honey – Properties:

Mount Athos sousoura honey is a product with high nutritional value and very tonic for the body as it exhibits antiseptic and anti-inflammatory properties with emphasis on the digestive system. It also has the ability to lower cholesterol levels. According to the latest scientific research, sousouras honey is the ideal choice for dealing with bacteria while helping significantly in faster wound healing!

A 2012 study found that honey from the heather plant had the highest content of phenols. Also, the high amount of antioxidants in heather honey helps remove free radicals produced as a result of metabolic reactions and interactions with external environmental pollutants. Killing these free radicals prevents aging and improves overall health!

Sousouras Honey – Collection:

Mount Athos sousouras honey is collected from September to November (period with very rich flowering for the plant) in the Garden of Panagia, but there are also years when it is not produced at all.
