The wild sage honey of Agioreit has a characteristic subtle aroma with a special taste and sweet aftertaste, while it crystallizes quickly in 1-2 months. However, it easily returns to its natural state if it is heated in a bain-marie at a low temperature (not above 70°C) because it loses its nutrients.

Sage is an evergreen shrub, herbaceous and aromatic. Other names for sage are ‘apple sage’ and ‘Salvia officinalis’. It belongs to the mint family, like other herbs like oregano, rosemary, basil and thyme.

The height of sage varies from 20 to 60 cm. The lower part is woody. The upper surface of the square branches is covered with velvety hair. Its leaves are large, oval and their color is grey-green. Its flowers are blue-violet. The most used are its dried leaves and flowers.

Sage is one of the most charismatic and property-rich herbs of Greece. The sage is found in most parts of Greece, but mainly in Southern Greece. About 20 species of sage have been found. It thrives in sunny and stony areas.
