vinification

Pre-fermentation extraction at 10-12oC for 48 hours.
Alcoholic fermentation in stainless steel tanks at a temperature (+/–) of 22oC for (+/–) 15 days. During fermentation, successive recycling of the must is carried out in order to come into contact with the marc and extract the tannins and anthocyanins of the grapes. After the end of alcoholic fermentation, malolactic fermentation follows.


Maturation: 10 months in 300 liter barrels of French oak.
(Barrels: 40% 1st and 60% 2nd and 3rd use)


Ageing: 6 months in bottle before placing on the market.<
