Authentic Wild Sage Honey from Mount Athos:

Mount Athos Wild Sage Honey is an exceptional monastic product produced by monks living in small cells and hermitages.

This honey is distinguished by its delicate aroma, unique taste, and sweet aftertaste. It crystallizes quickly, within 1-2 months, but can easily return to its natural state when warmed gently in a water bath (not exceeding 70°C), as higher temperatures may destroy its nutrients.

Sage, an evergreen aromatic shrub, is also known as “apple sage” or Salvia officinalis. It belongs to the mint family, like other herbs such as oregano, rosemary, basil, and thyme.

Sage shrubs range from 20 to 60 cm in height, with woody lower stems and velvety hairs on their square branches. The large, oval leaves are gray-green, and its flowers are blue to violet. Dried leaves and flowers are most commonly used.

Sage is one of Greece’s most versatile and nutrient-rich herbs. Although found throughout Greece, it is most prominent in the southern regions. Around 20 sage species have been identified. It thrives in sunny, rocky areas. On Mount Athos, it is cultivated extensively for winter use and medical purposes. In Greece, it is so well-loved that the French call it “Greek tea.” Sage’s intense aroma makes it suitable for use in small quantities. Rich in nutrients and compounds, it serves various purposes.
